Produceret af den friske Valpolicella tilsat gærresterne fra Amarone-produktionen. Herved startes en anden gæring, som koncentrerer vinens aroma og glycerol-indhold (= større fedme).
Efter endt gæring lagrer vinen 18 måneder på 3000 liters egetræsfade for at modnes.
I næsen finder man tørret frugt, kaffe, og peber. De tørrede noter kombinret med den friske frugt er lige det man søger i en god Ripasso. Fin smagsintensitet, der pirrer med fine krydderier. Slutter i et behageligt afbalanceret bid. Bør matches med kalv eller and.
